Dessert Time: Peach Lasagna

Evan Elsberry of Evan’s Kitchen whips up delicious fall dessert.

 

Frangipane (Almond Cookies) with Grilled Peach Dessert Lasagna

Frangipane

Butter                                    8 oz
Sugar                                     8 oz
Almond Paste                      1 lb
Eggs                                        4 oz portion
Eggs                                        8 oz portion
White flour                           5 oz

Cream together butter and sugar.  Soften almond paste with the 4 ounces of eggs and add to butter and sugar.  Continue to cream mixture.  Add remaining 8 ounces of eggs and cream well.  Add flour and mix until smooth.  Using a piping bag, pipe out 1 oz of batter on a greased baking sheet per cookie to be baked.  Make each cookie as flat and round as possible.  Cookies should be at least 2″ apart.

Bake at 375F for 6 minutes.

Mix for Grilled Peach Dessert Lasagna

4 ripe peaches
8 oz mascarpone cheese
1 cup cream cheese
4 oz peach schnapps
2 tbs powdered sugar
1 tbs vanilla bean paste
1 tbs brown sugar
1/2 teas cinnamon
1 tsp sweetened lime juice
1 tsp lemon juice
2 pinches of salt

Step 1:  Soften the cream cheese and peel the peaches.  Dice 2 of the peaches and poach them in the peach schnapps for one minute.  Drain the peaches and reserve the liquid.
Step 2:  Thinly slice the other two peaches.  Soak them for one minute in the reserved schnapps and grill briefly.  Be careful not to over grill.  Again, reserve the liquid.
Step 3:  Minch the poached peaches and mix in a bowl with the mascarpone cheese, half of the reserved schnapps, one tbs powdered sugar, the one tbs brown sugar, cinnamon, the one teas sweetened lime juice and one pinch of salt.
Step 4:  In a separate bowl mix the cream cheese, vanilla bean paste, remaining powdered sugar, the lemon juice, and pinch of salt.
Step 5:  Chill your mixes for at least one hour (or overnight)

Build your Lasagna:

Start with one almond cookie and build the lasagna layer by layer.  Piping out your mixes with a piping bag works best but  a spoon will do.  I like to build my lasagna cookie, grilled peach, cream cheese mix, grilled peach, cookie, grilled peach, mascarpone mix, grilled peach, cookie, grilled peach on top.  Then garnish with whipped cream and a mint leaf.
