Cooking an Oscar-Worthy Feast

Chef Dennis Samala of Creative Culinary Concepts in Carlsbad stops by the studio to cook up some Oscar-worthy dishes that inspired by some award nominees. On the stove this morning are Mandarin orange chicken dippers and Parmesan-garlic truffle fries.

For The Crazy Cuizine Crispy Mandarin Orange Chicken:

  • 1 bag Crazy Cuizine Mandarin Orange Chicken, slightly thawed
  • ¼ cup Canola oil, for frying

For The Mandarin Orange Slaw:

  • 1 pouch Mandarin Orange Sauce, reserve ½ pouch for coating chicken
  • ½ cup Mayonnaise
  • 3 Tbsp. Rice wine vinegar
  • 1 lb. Cole Slaw mixture
  • ½ cup julienne carrots
  • ½ cup. green onions, bias sliced
  • ½ cup Mandarin orange, canned, drained
  • 2 tsp. Black & White sesame seeds

For The Toasted Mini Slider Buns:

  • 12 each Mini Sliders, Brioche or Pretzel, Bosch Baking
  • As needed Pan Spray, Butter FlavorFor The Duck Fat Fries:
  • 1 qt. Duck fat
  • 26 oz. French fries, frozen, slightly thawed

For The Parmesan-Garlic Truffle Seasoning:

  • ¼ cup garlic cloves, minced
  • 2 – 4 Tbsp. Truffle oil
  • ¼ cup Parmigiano Reggiano, freshly grated
  • ¼ cup parsley, finely chopped
  • 1 Tbsp. sea salt
