The Guinness Cupcake

Cupcake batter

2 cups guinness stout

2 cups unsalted butter

1 1/2 cups coco powder

4 cups all purpose flour

4 cups granulated sugar

3 tsp baking soda

1 1/2 tsp salt

4 eggs

1 1/2 cups sour cream

Ganache with jameson

1 pound chocolate chips

1 1/2 cups heavy cream

4 tbsp butter

4 tsp Jameson whiskey

Preheat oven to 350 degrees

Simmer Guinness and butter then add coco powder and whisk till smooth

Cool slightly

Whisk flour, sugar, baking soda and salt in a bowl till combined

Beat eggs and sour cream until combined then add Guinness mixture until just blended

Add flour mixture and beat briefly the finish by folding batter together

Bake at 350 for 17 mins or until a toothpick comes out clean

Let cool

For ganache heat cream in pot and add to chocolate chips

Mix until all chocolate Is melted and smooth

Then add butter and whiskey cool slightly of until thick and pipe able

Once both are cooled pipe ganache into cupcakes

Top with Guinness ice cream and enjoy
