Toni Okamoto runs a blog called Plant Based on a Budget where she shares healthy and affordable food recipes. Today she showed us that you can enjoy a sweet treat that’s actually healthy. She made chocolate mousse with tofu and the taste pleasantly surprised Gary and Lori. You can make it yourself with the recipe below.
Chocolate Mousse Recipe:
12oz bag of non-dairy semisweet chocolate chips
1 package silken (soft) tofu,drained
2 tsp vanilla extract
1 vegan graham cracker crust
Melt chocolate chips. i put mine in the microwave for 45 seconds and mixed until smooth.
Put tofu in a blender and blend until creamy. add melted chocolate and vanilla, mix thoroughly.
Add tofu chocolate mixture to the pie crust and place in freezer for about an hour and a half.
